Selecting the country (and others you have events, people and resources in), as well as the default timezone can be done via the ‘Configuration’ page, via the ‘Other’ menu at the top-right of the page.

From there, select the primary country, and confirm the timezone selected is correct.

If you operate in any other additional countries, these can be selected - ie. New Zealand in the screenshot below;
